The yellow corn we know today isn’t the corn that the ancients know. One of the ancient forms of corn is a purple variety called “kculli” with a denser flavour and nutrition. This purple corn may have originally been grown in the coastal and mountainous areas of Mesoamerica.

It was a staple food by the Incans. They have cultivated it for thousands of years, soaking it in hot water to make a drink called chichi morada. They also used it to put colour to other food and beverages, a practice we know today as colorant.

Purple corn belongs to the same species as the yellow table corn. Locally called “maiz morado,” it is an Andean crop that is both a grain and a vegetable. Corn belongs to the grass family and purple corn is one of its variants. Other corn variants are the typical yellow, orange, red, black and white.
