Compared with other flours which are laden with thickeners, ruthlessly bleached and heavily processed, our coconut flour is made from coconuts which have been organically grown and ethically sourced from our producer in Java, Indonesia and the Philippines where it is endemic. We choose only the freshest most mature coconut fruits so the flour will be firmer with a solid white color.
There are absolutely no preservatives or chemical treatments used in the way we process our flour and it is completely raw. The coconuts are naturally dried under the sun for 45 days and then the husks are removed by hand. After washing the kernels and passing it through a shredder, the coconut slivers are then carefully dehydrated and passed through a cold press to extract the oil and get the residue, which is the basic ingredient of our flour. The residue is simply cold-milled after so we know the delicate nutritive balance in coconuts is maintained.
